Cretan Sage (Salvia fruticosa, Greek Φασκόμηλο) is an iconic Mediterranean herb with silvery-green, velvety leaves and an intense earthy aroma. This perennial shrub, adorned with pink flowers, has been woven into Crete's culinary and herbal traditions for centuries. Hand-harvested leaves are shade-dried to preserve their complex flavor profile—a harmonious blend of herbal freshness, subtle bitterness, and citrus undertones.

Cretan sage is among the plants with the highest content of essential oils in the Mediterranean flora. Traditionally, it has been used not only for preparing herbal infusions but also as a seasoning for meats. It grows in the warmer, dry areas of Crete, typically in lowlands and lower mountain regions (0–800 m) in mineral-rich soil under abundant sunlight.

  • Leaf Pour boiling water (90°C) over 1 infusion bag and steep for 5–10 minutes covered. The longer the steeping, the more bitterness develops.
  • Leaf Perfect with thyme honey or lemon—a classic Cretan pairing.
  • Leaf Refreshing as iced tea: cold-brew for 4 hours in the refrigerator.
