Kalamon Olives Zafiriou – whole olives with pit from the Chalkidiki region – represent the best of Greek olive tradition. These Kalamon-type olives (often called Kalamata) have a characteristic elongated shape, deep purple color, and a mildly tangy, rich flavor with fruity notes. Juicy, with firm flesh and a very pleasant crunch when bitten into.

Unlike many other varieties, Kalamon olives boast a significantly higher antioxidant content – up to twice as much as common table olives. Thanks to traditional processing without chemical preservatives, they retain not only their original taste but also their natural nutritional value and health benefits.

These olives are ideal for Greek salads, with cheese, in tapenades, or simply as a savory treat. They are pasteurized, free of added chemicals, and processed by the family-owned Zafiriou Olives, a company that has honored quality, respect for nature, and traditional recipes for over 40 years.

Knowledge Labyrinth

What you may not know about Kalamon olives:

  • ✔️ Kalamon is a valued variety known for its elongated shape, dark purple to black color, and intense flavor.
  • ✔️ Originating from the Kalamata area (southern Peloponnese), it is now widely cultivated in Chalkidiki, Thessaly, Crete, and other Greek regions.
  • ✔️ High in polyphenols and antioxidants (up to 2× more than typical table olives), especially oleuropein, hydroxytyrosol, and flavonoids.
  • ✔️ Contains vitamin E, fiber, and natural phenolic compounds.
  • ✔️ Kalamon olive trees are resilient and productive.
  • ✔️ Harvested by hand at full ripeness – from November to January.
  • ✔️ Used exclusively as a table olive, not for oil extraction (contains only 15–20% oil).
  • ✔️ Traditionally debittered in brine or wine vinegar.
  • ✔️ The flesh is firm, meaty, and pleasantly crisp.
  • ✔️ Flavor is rich, fruity, slightly tangy, sometimes with wine-like tannin notes.
  • ✔️ Pairs excellently with both white and red wine and cheeses.
  • ✔️ No chemical preservatives – only natural ingredients.
  • ✔️ The term “Kalamata” is protected under EU PDO status (Protected Designation of Origin) and may only be used for this variety grown in the Kalamata region. Outside this area (e.g. Chalkidiki), the term Kalamon is used – though genetically it is the same variety.
